DMG is a type of emulsifier derived from the hydrogenation of vegetable oils. It is composed of a mixture of mono- and diglycerides, with the monoglycerides being the predominant component. These molecules have hydrophilic (water-attracting) and hydrophobic (fat-attracting) properties, which allow them to interact with both water and fat in the ice cream mixture.

 

 

When added to ice cream, DMG acts as an emulsifier by reducing the surface tension between the fat and water components.
