Mono and Diglycerides (E471) also named GMS40/D50 bring key functionality to oils and fats, dairy products, frozen desserts and confectionery.
 
Mono and Diglycerides (E471/GMS40) is available in variations depending on the concentration of mono-diglyceride. Variants are available with a mono-diglyceride concentration of 40-60%. It applies in bread and cake, to improve cake texture and paste stability, also prolong shelf-life.
 
In addition, Mono and Diglycerides (E471/GMS40) are non-ionic surfactants with properties (emulsifying, dispersing, foaming, antifoaming, restraining starch retrogradation and controlling fat condensation).
