How to use SP Cake Gel Emulsifier:
1. When making cakes, just add the slurry to the mixing tank before the slurry is quickly stirred.
2. When making bread, it is added last with fat.
3. Make moon cake skin and add it together with grease.
4. When making the tide-style mooncake skin, add it into the crisp heart.
Suggested dosage:
1. Cake : Add 3%-5% of the flour, but not more than 3% of the total finished product.
2. Bread: Add 1-2% of the flour.
3. Moon cake: Add 5% of the flour.
4. Crispy cake: Add 0.3% of the flour.
Note:
- Ensure it dissolve fully before batter mixed, or it is easier give a precipitate.
- It can shorter rise time, it can’t mixed too long
- Used in moderation when making bread, moon cake, or have the opposite effect.
