      Mono and Diglycerides is non-ionic surfactant with properties of emulsifying, dispersing, foaming, antifoaming, restraining starch retrogradationand controlling fat condensation), which bring key functionality to oils and fats, dairy products, frozen desserts and confectionery. 

       Mono and Diglycerides can be applied to coffee whitener, giving a more uniform fat globule size distribution, improving whitening and dissloves in water.

      Also can be applied to bread and cake to improving cake texture and paste stability and prolong shelf life. 

      It can improve foam stability in desserts as well.
